Belle made these last night for our ward ski party and they turned out delicious! They have been a family favorite for years. The only trick with these is to make sure that you put in extra oatmeal so the cookie dough is stiff or they will spread out and be thin. PS Belle accidentally used all wheat flour and you couldn't even tell, so feel free to sub wheat flour for the white.
1 1/4 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
Combine above ingredients. In seperate bowl beat:
1 c. butter or margarine, softened
3/4 c. sugar
3/4 c. packed brown sugar
2 large eggs
1 tsp vanilla or grated peel of one orange
Gradually beat in flour mixture to the egg mixture. Stir in:
3 c. quick or old fashioned oats
1 2/3 c. butterscotch chips (11 oz bag)
Drop by tablespoonfuls onto ungreased baking sheets. Bake about 8-10 min. at 375. Yield 4 dozen cookies To bake in 15 x 10 jelly roll pan, bake for 18-22 min. or until light brown.
