
Janine's Sugar Cookie Recipe
Poor Aunt Janine just can't make enough of these Holmstead family favorites! She has to make dozens and dozens just to let everybody get a couple of these cookies, because there are a few hoarders(who shall remain nameless) who rush the table as soon as these are put out and start stuffing them in every able hiding place so they can satisfy their craving! I usually double these (at least to make about 3 dozen)
2/3 c shortening
3/4 c sugar
1 egg
Mix well till lightened in color, then add 4 tsp milk and:
1 tsp vanilla
1 1/2 tsp baking powder
1/4 tsp salt
2 c flour (or a little less)
grated zest of 1/3 orange
Mix well and add more milk if too stiff. On floured surface, roll out thickly and cut into shapes. Bake at 375 for about 10 min. Cool , frost with Cream Cheese Frosting. Makes about 18 3" round cookies.
Cream Cheese Frosting
Beat 1 8 oz package softened cream cheese till lump free, then add 1/2 c. softened butter. Mix well then add almost 2 tsp orange extract to taste. Then add add 1/4 c milk, then almost 1 (32oz) bag of powdered sugar. Adjust thickness if needed by adding more sugar or milk.
