
These are to die for, and so easy. It took me about 10 min total to whip these up, and we had them for dinner. We ate them topped with strawberries and powdered sugar.
2 c. whole wheat flour
1 TBL baking powder
1 tsp salt
2 TBL oil
2 c. milk (can substitute 1 c. of the milk with eggnog or chocolate milk for a yummy variation)
2 eggs- separated, whites whipped stiff and yolks mixed in with flour and milk
Stir until well mixed, add flour or milk if too thin/thick, then fold in egg whites. Variations: 1.You can add 1 tsp pumpkin spice 2. you can add 1 blended up banana 3. you can add 1/2 c. blueberries.
