Mile High Cloud Biscuits

Belle and I made these this morning for Conference and they were pretty awesome! The combination of butter and shortening makes the biscuits divine. The key with biscuits is not to stir or handle the dough too much to keep them nice and flakey.

2 c. flour
4 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
Combine together, then cut in:
2 TBLSP butter
2 TBLSP shortening
until the mixture looks like crumbs. Make a well in the center and pour in 1 c. chilled buttermilk (i used 1 TBLSP vinegar mixed with 1 c. milk). Stir just until the dough comes together, it will still be very sticky. Turn dough onto floured surface and dust top of dough with flour. Gently fold dough over on itself 5-6 times and rollout 1 inch thick. Cut with 2 inch cutter, bake on sheet at 350 for 15-20 min. Makes about 1 dozen.
