This is our favorite bread recipe! And it is really versatile. I usually make 2 pans of rolls and 2 loaves of bread with this, but you can make 4 loaves of bread or 4 batches of rolls. It freezes beautifully and tomorrow I am making cinnamon rolls with the dough for General Conference :)
2 TBLS yeast
2 tsp sugar
1/2 c warm water (just a little too hot for the baby's bath)
Combine and let rise for 10 min. It should foam and rise.
Scald(bring just to the boiling point) 2 c. milk and add to a bowl with:
1/4 c. shortening
1/2 c. sugar
5 tsp salt
Stir until shortening has dissolved, then add 2 c. cold water and the yeast mixture.
Add:
10 c. bread flour (can use up to half wheat)
Mix in Kitchen aid or by hand until combined, then knead for 10 min by hand, 4-6 min with kitchenaid dough hook until smooth and not sticky. Put in greased bowl, turn over and cover with wax paper that has been sprayed with non stick spray and then a kitchen towel. Let rise in warm place 50 minutes, punch down and divide into 4 pieces. Roll into loaves or rolls or cinnamon rolls, put into greased pans and cover like before and let rise 40 min. Preheat oven to 400. Bake rolls for 15-18 min, loaves for 25-30 min. Make sure if you are making cinnamon rolls they are not squashed in too tightly to allow room for spreading.
