3 TBLSP instant yeast
2 TBLSP sugar
1/2 c. gluten flour (optional but recommended, especially if you have hard, dense loaves)
5 c. whole wheat flour
2 TBLSP salt
Mix above ingredients together. Add:
5 c. hot water
2/3 c. honey or sugar or molasses
2/3 c. oil
While mixing with a dough hook in your Kitchenaid, or your brute strength, add 5-7 c. more of flour until dough pulls away from the side of the bowl. Knead for 5 minutes, until smooth and satiny. Grease bread pans, form into loaves and let rise, covered, until doubled (about 30 min). Bake at 350 for 25-30 min.
This makes at least 4 loaves, and all of my friends said this was the best whole wheat recipe they found after trying multiple ones. I like it because you only have to let it raise for 30 min, so you can have hot, homemade bread in less than 2 hours. You can find gluten in the baking aisle by the flour, Bob's Red Mill has some, and sometimes you can find it in bulk. It helps the bread to raise better and helps to keep it fresh longer. I like to grind my wheat really fine, and the kids think it is just my regular 1/2 wheat, 1/2 white recipe!
