Cornbread

This is a great recipe to try on Chili nights! My kids like the cornbread more than the chili! This is a sweet cornbread, FYI, and tastes great with butter and honey. We got this one from the recipes Grandma Leah sent us one year for Christmas.

1 c. butter or margarine, melted
1 1/3 c. sugar
2 c. buttermilk (or use 2c. milk with 1 TBL vinegar and let sit out for 5 min)
2 c. cornmeal
2 c flour
4 eggs
1 tsp baking soda
1 tsp salt

Mix butter and sugar together. Add eggs. Beat until well blended. Combine buttermilk and soda, stir into preceding mixture. Add cornmeal, flour, and salt. Stir until just blended. Pour into a greased 9 x 13 pan and bake at 350 for 45 min or until it begins to pull away from sides of pan and is done in the center.
