What's for Dinner?


How about a bowl of this delicious lasagna soup? I tried it tonight and got a thumbs up from everyone in the family (a rarity!) It takes about 1 1/2 hours to simmer, so plan accordingly, it is worth it :)

Lasagna Soup

1 lb. Italian sausage(I used Jimmy Dean's)
2 medium onions, finely chopped
4 minced garlic cloves
2 tsp oregano
1/4 tsp red pepper flakes
2 TBLS tomato paste
1 28 oz can petite diced tomatoes
7 c. chicken broth
2 bay leaves
8 oz. fusilli pasta
1 TBLS dried basil or 1/2 c fresh chopped basil
8 oz ricotta
1/2 c grated parmesan
1/4 tsp salt
pinch pepper
2 c. shredded mozzarella

In a large pot, saute sausage for 5-7 min until no longer pink, breaking it up with a wooden spoon as you go. Drain excess fat, then add onions and saute until softened, about 6 min. Add garlic, oregano, and red pepper flakes and saute for 1 min. Add the tomato paste and saute for 5 min. Add tomatoes with their juice, the broth, and the bay leaves and bring the soup to a boil. Reduce heat and simmer for 30 min.
Add the pasta, then increase heat and boil soup until pasta is tender to the bite, following pasta directions on the package. Discard the bay leaves, then stir in the basil. If desired, season with salt and pepper.
In a small bowl, combine ricotta, parmesan, 1/4 tsp salt, and pinch pepper. To serve, place about 1 1/2 TBLS of the ricotta mixture in each bowl, then sprinkle with some of the mozzarella and ladle soup on top. Makes about 13 cups.
