We served this for my dad's surprise 60th birthday party with smoked turkey, fruit salad,and rolls, and they were delicious!
32 oz. bag frozen shredded hash browns(can use cubed but have to increase baking time)
2 10 oz cans cream of chicken soup
2 c. sour cream
1 1/2 c grated cheddar cheese
1/2 c melted butter
1/2 c chopped onion
Preheat oven to 350. In large bowl combine soups, sour cream, cheese, onions and the melted butter. Gently fold in hash browns. Pour into pan, bake for about 1 hour. If you use defrosted potatoes they will cook quicker.
