Candy Cane Cookies


Emma just really wanted to make these cookies after she saw them in the family fun magazine. I probably never would have made them because they didnt have any frosting, but they turned out yummy and looked great! It was fun too, like playing with playdoh, so they are perfect for kids.

1 c butter, softened
3/4 c. sugar
1 large egg
1 1/2 tsp vanilla
1 tsp peppermint
1/4 tsp salt
2 1/2 c. flour
1/2 tsp red food coloring
1/2 tsp green food coloring
Cream butter, then gradually add sugar. Beat in egg until evenly mixed, then add peppermint and vanilla extract and salt and blend well. Stir in flour with wooden spoon, divide into thirds. Add red food coloring into one third by kneading, and the green to the other third and leave one third white. Flatten third into rectangle and refrigerate until firm, about 30 minutes. Heat oven to 375, and on a lightly floured surface roll tablespoon sized pieces into 8 inch long ropes. Twist them together, pinch the ends, and bend into candy cane shape. Bake on ungreased sheet until set but not brown, about 10 min. Cool for 5 min. before transfering to cooling rack. Makes about 18 cookies.
