Oreo Truffle Cake Pops


I love the Bakerella blog, she does all the really artistic cake pops and thought I would try them. My first attempt didn't go so well but these turned out much better, and are super yummy!

1 bag semisweet chocolate chips, plus extra 1/2 c.
1 8 oz. softened cream cheese
1 16 oz pckg Oreo cookies
sucker sticks
styrofoam

Process 9 cookies until they are fine crumbs and set aside. Crush remaining cookies until they are fine crumbs, and combine with cream cheese until they are mixed smooth. Line large baking sheet with wax paper, roll mixture into small balls. Melt 1/2 c. chocolate chips in microwave, dip end of sucker stick in chocolate, then place deep into truffle balls. Refrigerate several hours or overnight. Melt rest of chocolate chips, and pour into deep mug or bowl. This will help the chocolate to be deep enough to dip all the balls. Then, working quickly so the balls don't defrost(or they will start to fall off the sticks) dip balls in chocolate and tap off excess. Dip tops in reserved crumbs. Place sticks in styrofoam until set. Makes about 40-50.
