

If I make something anymore it needs to be quick! These are easy, and don't take too much time all at once. They really made our 4th of July barbeque festive. But plan ahead for the jello because each layer needs time to set. Both were big hits, and we just served the jello for dessert.
RED, WHITE AND BLUE SALAD
1 3 oz. pckg berry blue jello
2 c. boiling water, divided
2 c. cold water, divided
1 c. fresh blueberries
8 oz reduced fat cream cheese, softened
3/4 c. sugar
1 to 1 1/2 c. coolwhip, depending on desired thickness
1 3 oz pckg strawberry jello
1 c. sliced fresh strawberries
Additional cool whip and blueberries to decorate
In large bowl, dissolve berry blue jello in 1 c. boiling water, stir in 1 c. cold water. Add blueberries, pour into 3 qt. serving bowl, refrigerate until firm about 1 hour. Beat cream cheese until smooth, add sugar and mix well. Fold in cool whip, spread over blueberry layer and refrigerate another 1-2 hours. In a large bowl dissolve strawberry jello in remaining hot water, stir in 1 c. cold water. Add strawberries. Let cool slightly, then spoon over cream layer. Refrigerate until firm, decorate top with cool whip mounds with a blueberry on top. Serves 14-16.
PATRIOTIC PUNCH
Pour red gatorade or kool aid into ice cube trays, freeze. Do the same with blue gatorade or kool aid. Pop out colored ice cubes, put 3-4 in clear glasses, top with 7-up.
